Rosemary Focaccia Bread

I made this bread and it turned out so delightfully tasty and perfectly textured.
I’m sharing the recipe I used.
It’s so easy!
I love my bread machine, and using it is the only way I would ever get bread made properly from start to finish, with all my many distractions and the loud little person following me around all day.
I’m not sure how to convert the recipe to a non-bread machine, but I’m sure some foodie would know how to do that, so maybe there’s a google search for that.


Here is the recipe:

  • 3/4 cup water
  • 2 tablespoons olive oil or vegetable oil
  • 2 cups bread flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 1/2 teaspoons bread machine or quick active dry yeast
  • 3 tablespoons olive or vegetable oil
  • 2 to 3 tablespoons chopped fresh rosemary leaves
  • coarse salt, if desired.

MEASURE carefully, placing all ingredients except 3 tablespoons oil, the rosemary, and coarse salt in bread machine pan in the order recommended by the manufacturer.

SELECT dough/manual cycle. Do not use delay cycles.

REMOVE dough from pan, using lightly floured hands. Cover and let rest on lightly floured surface 10 minutes.

GREASE large cookie sheet. Roll or pat dough into 12-inch circle on cookie sheet. Cover and let rise in warm place about 30 minutes or until almost double.

HEAT oven to 400 degrees. Make depressions in dough at 1-inch intervals with fingertips. Drizzle with 3 tablespoons oil. Sprinkle with rosemary and coarse salt. Bake 15 to 18 minutes or until golden brown. Serve warm, or cool on wire rack.

Quick dinner idea –

I cut the bread into rectangular chunks and sliced them in half and made grilled cheese sandwiches. This is easy and tastes much more full than your typical grilled cheese because of the extra flavors in the bread. You could also add tomatoes, basil, spinach, bacon, ham, whatever – inside your sandwich to tweak it to your liking. Pretty much anything you grill this bread into is going to taste like heaven. I also threw tomato soup on the stove to round out the meal.
